The lovely weather this weekend inspired my sister and I to do a spot of baking. We opted for muffins this time round as we've made a fair few cupcakes over the last few months! We found a simple recipe online that was for banana muffins so tried that out first then made a second blueberry batch.
To make these we melted 125g of butter with 150g of caster sugar then added some vanilla extract. We stirred in two mashed bananas before adding an egg and mixing well. We then sifted in 180g of self raising flour and added 60ml of milk. Finally we poured the mixture into 12 muffin cases and cooked them for 20 mins in a fan oven at 180. For the blueberry version instead of adding the banana, we pushed 4 blueberries into each muffin case once we'd poured the mixture out. In hindsight, we decided it would have been better to fold the blueberries into the mixture at the point that you'd normally add the bananas as that way they'd be spread more evenly throughout the muffins rather than just on the top!
Overall they came our pretty well for our first attempt even if I do say so myself :)
